Crispy PEI Mussels

Total cooking time: 2-3 minutes
Serves 1

1 cup cooked, shucked PEI mussels
1 cup dry breadcrumbs
1 egg
2 tbsp water

Roll mussels in breadcrumbs
Beat egg and combine with water
Dip breaded mussels in egg mixture then roll in crumbs again
Fry in deep fat heated to 190°C (375°F) for 2-3 minutes.

Drain well
