Mussel Mariniere

Preparation time: 10 minutes
Total cooking time: 10 minutes
Serves 4

2kg (5 lbs) PEI Blue Mussels
1/4 cup white wine
1 onion, coarsely chopped
1 celery stalk, chopped
1 clove garlic, minced
Dash of Thyme

Place all ingredients, except mussels, in a large pot with a tight fitting lid.
Bring to a boil.
Immediately add mussels.

Steam until mussels open, 3-5 minutes.
Serve as is, or strain broth, place over high heat, add 1 cup of cream, reduce to taste, stirring constantly.
